Chicken Bacon Ranch Bagel Bites Recipe

I hate to admit that I tend to waste a lot of food in my household.  With only two people in my house it becomes difficult to cook without having to eat the same leftovers for an entire week.  I’ve been trying to be better about waste because it is practically like throwing money in the garbage. I’ve been spending more time lately rifling through my refrigerator and pantry and trying to use what I have for meals. With a little creativity I have done a pretty good job of wasting less food.  Here’s a prime example: Chicken Bacon Ranch Bagel Bites

Early on in the week I had picked up one of those rotisserie chickens from my local grocery store. I had leftovers and was trying to put them to good use. Then I spotted the mini bagels that my fiancé just had to have but never seemed to eat. Bagel bites sounded like a great use for both products. One of my favorite flavor combinations is chicken, bacon and ranch so I figured I’d run with that. Using the bacon bits that I typically sprinkle on my salad, I mixed them together with the leftover chicken and some cheese. I pulled the flavors together with a sprinkle of Litehouse Freeze Dried Chives and a star was born!

I had some Litehouse Homestyle Ranch on hand to add some delicious flavor to my bagel bites. So here’s the ‘takeaway’ from this post: more creativity, less waste. Bringing your leftovers together with a little bit of creativity can help create all new meals and cut down on the food waste in your house. You can craft delicious meals with just a few ingredients from your refrigerator or pantry that can help you save money and eat better!

 

Chicken Bacon Ranch Bagel Bites Recipe

This seasoning rub using Litehouse herbs is the perfect holiday gift! Here the rub is used on a delicious turkey breast cooked in the slow cooker.

Ingredients

Directions

Preheat the oven to 400°F. Cut the bagels in half and place them onto a baking sheet.Divide ¼ cup of cheese evenly amongst the 8 bagel halves.Combine the chicken, remaining cheese, tomatoes, Litehouse® Freeze Dried Chives and bacon bits in a medium bowl and toss to combine. Divide the mixture evenly among the bagel halves.Bake the bagels for 10-12 minutes, until the cheese is melted. Remove the bagels from the oven and drizzle with the ranch dressing.
