Roasting vegetables, like green beans and mushrooms, in the oven is extremely easy and just requires cranking up the heat, spreading out the produce in a single layer, and drizzling with olive oil or a light marinade. Walk away, go about your business for about 20 minutes, coming back once to stir up in the pan.
I love how the delicate tips of the green beans get lightly browned and crisped and how the mushrooms transform into almost “meaty” morsels of yum. I could eat the whole pan!
