Memorial Day is a holiday of remembrance of those who have died while serving in the armed forces. School is out that day and you many have the day off of work. There are parties, cookouts and a lot of red, white and blue.
For some reason, Memorial Day includes a lot of grilling. Maybe that’s because many of us consider Memorial Day the day that unofficially signals in summer. Summer doesn’t technically start until June 21st this year, but when the kids are just getting out of school and the weather is warming up, it sure feels like the start to summer!
We have many recipes on the Living Litehouse blog to help you plan a Memorial Day cookout. One of my favorites is this Sweet Onion Pork Chips with Grilled Peaches. There are a variety of different appetizer, dip, and side dish recipes that you can serve along side a yummy grilled meal. Let’s just hope the weather cooperates!
When entertaining, I like to serve fun foods that people wouldn’t normally make at home on an average night. These Mojito Marinated Watermelon slices are the perfect entertaining dish. It is fresh fruit and a cocktail all wrapped up into one!
Litehouse Freeze Dried Mint means you can make a mojito in no time. I love that I always have a variety of freeze dried herbs on hand.
The watermelon slices are thickly cut and topped with fresh berries. You can drizzle any leftover mojito over the top of the berries before serving. Try using a lemon lime soda or a sparkling juice in place of the rum if you prefer a non-alcoholic version. You could also cut the watermelon into chunks and mix the watermelon and berries all together in a big bowl, but the slices are much more fun- almost like a pizza!
