1. Preheat the oven to 400°F. Line two baking sheets with parchment paper.2. In a medium skillet, heat the olive oil over medium heat. Add the shallots and a sprinkle of kosher salt. Sauté for 10 minutes, stirring occasionally, until the shallots are very soft and golden in color.3. Unroll both sheets of puff pastry and cut along the seams of each sheet. Slice each rectangle into 3 squares, creating 18 squares total. Use a paring knife to score a half inch crust around the outside of each tart.4. Arrange the puff pastry on the prepared baking sheets. Brush the outer portion of the tart with the egg wash.5. Spread a teaspoon of jam in the center of each tart. Top with a teaspoon of caramelized onions. Top with a teaspoon of blue cheese. 6. Bake the tarts for 15-18 minutes or until the crust is golden brown.7. Garnish with a sprig of fresh thyme and a drizzle of honey.
