As I headed out to my local farmer’s market this past weekend I was super disappointed to hear that it was the last weekend that they would have booths set up until next summer! I was so disappointed that the season had already ended because my favorite vendor there is a local organic farmer. She brings in the most beautiful garlic that you have ever seen and her tomatoes are to die for! I look forward to her stand every summer because it gives me a chance to fill up on delicious organic produce. I picked up a delicious butternut squash over the weekend from her to make this quick and easy One-Pan Balsamic Rosemary Chicken and Squash.
I should also mention that this organic farmer told me she appears at another fall/winter farmer’s market in my town so I wouldn’t have to miss out on other season vegetables until she’s back in the summer! This made me really happy because I’ve been trying to make more of an effort lately to get more organic food into my diet. There are so many health benefits of eating organic foods:
