I’ve spent the last month getting myself back on the healthy eating train. I think I’ve eaten enough lettuce salads to put any rabbit to shame. True. Story. I enjoy a good salad now and again because they are packed full of nutrients but after eating them for one month straight, it’s time for a change.
I love that this Avocado Chickpea Salad combines two of my favorite foods: avocados and chickpeas. I’ve always had a healthy obsession with avocados but chickpeas are pretty new to me. Chickpeas are an excellent source of protein and fiber as well as vitamin B-6, iron and magnesium. Combine all of those good things with the healthy fats found in avocados and you’ve got yourself the perfect lunch.
I’ve been doing a lot of meal prep on Sunday to help keep me sane during busy weeks. This past Sunday I prepared this salad along with a bag of mixed vegetables for each day to bring to work for lunch and I’ve been really satisfied with how full the combination keeps me. I recommend leaving the lime juice, salt and pepper off of the salad until you’re ready to serve the salad because it breaks down the feta and avocado. I know that it’s all going to the same place but I prefer to keep the flavors separate until I’m ready to eat them! Just put a lime wedge into your lunchbox to squeeze over the top of your salad before eating.
