If you’re a homeowner like myself then you know exactly how it feels to always have a project. I moved into my house 2 years ago and it seems like we are always making changes here and there to make it more like our dream home. Last summer we started on our backyard by putting in a patio and a fence and with these little steps we started to make it into a sanctuary. This year we have been working on landscaping and gardening and seriously, it is so much work. But rewarding. After a long weekend of working on the yard I sat down with this Avocado Greek Chicken Salad at my patio table and just enjoyed the warm weather and my hard work.
I really hate summer projects, unless I get to sit outside and do them. In Wisconsin, we have a very short spell of warm weather and I like to soak up as much as I can! Do you feel the same way? I want to encourage you to find a little ‘me’ time in the middle of all the projects and life to make sure you give your body and mind a chance to recharge. Little moments like sitting on my patio for 30 minutes with my lunch allow me to soak up some sun, recharge and fuel my body with something delicious. Without those moments, I probably would go insane!
I know that I talk all the time about my love of salads that are exploding with toppings. I think that this one is by far my favorite. I’m all about the Greek salad and this one is taken up a notch with avocado and freshly grilled chicken. I like to use the Litehouse Red Wine Olive Oil Vinaigrette as a marinade for the chicken and for a topping. You can also go with the Balsamic Vinaigrette too. I like to slice my chicken breasts in half so that they are thin before marinating. They also cook more evenly.
