I’m not sure about you, but I get bored pretty quickly with the same old lunch routine. Enter: bacon chicken ranch lettuce wraps!
They fit the bill for a perfect lunch recipe: easy to make, not too many ingredients, refreshing, and of course, delicious. For those that don’t work from home, it’s super easy to prep all of the components ahead of time. Here’s what you’ll need!
First up, grill some chicken. If you already have leftover chicken from another meal, great! This is a perfect use for leftover rotisserie chicken.
If you don’t have any cooked chicken, don’t worry – it’s super easy to grill in just 10 minutes. Season each chicken breast liberally with salt and pepper. No need to get fancy with seasonings here – we’ll add flavor later on with the bacon and ranch!
Grill the chicken for about 5 minutes on each side, or until fully cooked. You can also use a grill pan or skillet if you need to cook indoors. Once the chicken is fully cooked, you can either slice into thin strips or dice into cubes.
While the chicken is cooking, get your bacon going. Feel free to use store-bought bacon bits, but homemade are super simple! Simply cook the bacon in a large skillet until crispy and browned. Make sure to pat with paper towel after removing from skillet to remove excess grease. Crumble up or dice the bacon into smaller bits and set aside. You can use any leftovers for other salad or soup recipes!
When it comes to choosing lettuce, be sure to choose something with a large, sturdy leaf. We used butter lettuce here and it worked perfectly, but we also suggest romaine or green leaf lettuce. If the pieces are a bit flimsy, you can always double up on lettuce so none of the filling falls out! And of course, if you’d prefer, you can simply chop up the lettuce and serve this as a normal salad.
When it comes to toppings, Litehouse® Organic Ranch is a must. Go crazy with however much you’d like on top, but definitely don’t skip it! It takes these lettuce wraps from boring to saucy and flavorful. Lastly, we like to top with some halved cherry tomatoes and fresh chives. The perfect lunch!
