The weather is finally BBQ-perfect, and that means we can finally start using our grills. I'm talking about juicy Beer Marinated Chicken with Gorgonzola Sauce. To make this dish extra flavorful, I mixed some lovely caramel Alaskan Amber, an alt-style ale with a bit of honey, Worcestershire sauce, and smoky chipotle pepper. I also used Litehouse Simply Artisan Gorgonzola Crumbles to make the sauce. This cheese is aged for 100 days to ensure its award-winning signature flavor has enough time to develop. It is a real flavor bomb! The combination of sweet, smoky, and spicy goes excellent with the creamy and slightly tangy Gorgonzola sauce, and the crisp, cool Alaskan beer pairs perfectly with Litehouse Simply Artisan Crumbles. - 1 cupAlaskan Amber
- 1 tbsphoney
- 1 tbspWorcestershire sauce
- 1 tspkosher salt
- 1 tspchipotle powder
- 1 clovesgarlic, minced
- 2 lbsboneless, chicken tights
- 1 ealemon, sliced
- 2 tbspcanola oil
- 1 eahandful of fresh basil leaves
For Gorgonzola Sauce:
- 3 ozLitehouse® Gorgonzola Cheese Crumbles
- ¼ cupwhole milk yogurt
- 1 tbspminced chives and basil
- 1 clovesgarlic, minced
- 1 eaFreshly ground black pepper to taste
Directions
In a medium bowl, whisk together beer, honey, Worcestershire, salt, chipotle, and garlic.In a large bowl, combine the beer mixture and chicken. Cover the bowl with a lid or a plastic wrap and marinate for at least 1 hour at room temperature or refrigerate overnight. Right before grilling, drain the chicken from the marinade and pat dry with a paper towel.Preheat the grill to medium-high heat. Brush the chicken with oil and place on the grill with lemon slices. Cook, flipping once, about 5-6 minutes per side. Cook lemon slices for 2 minutes per side.Meanwhile, in a small bowl, make the Gorgonzola sauce by mixing all the ingredients together.Serve chicken immediately, topped with grilled lemon slices and basil leaves, and Gorgonzola sauce on the side.
