Blue cheese, in all its rich, creamy, aged-to-perfection glory, brings balance to the sweetness of the berries. In my opinion, if a little blue cheese is good, then a lot of blue cheese is better! So, I’ve tossed in a whole tub of Litehouse® Simply Artisan Blue Cheese Crumbles along with the quinoa AND THEN dressed the entire salad in tangy Blue Cheese Vinaigrette Dressing for a double boom-bang of this delicious soft cheese.
Quinoa makes such a fabulous foundation for no-lettuce salads, it’s packed with fiber, protein and other important nutrients, has a hearty texture, and can be made ahead without getting soggy. Listen up, nobody wants a soggy, wilted green salad at a picnic! This versatile quinoa salad can be made the night before, and kept chilled until serving, making it ideal for meal-preppers and those who pack a lunch for work.
In addition to berries and blue cheese, this salad includes red radish slices and Litehouse® Freeze Dried Red Onion, both to add extra crunch and color to this already texturally and visually interesting fruit salad. I find it handy to keep a jar of convenient freeze-dried onion in the pantry for times when I need just a bit of onion, but don’t want shed tears over chopping a fresh one.
