Skip the expensive brunch and make these quick and easy chorizo breakfast tacos at home! With just a few simple ingredients and about 15 minutes of prep and cook time, you’ll have a delicious, flavorful breakfast for 4.
With spicy chorizo, medium-spicy salsa and creamy, delicious Litehouse® Jalapeño Ranch dressing, these breakfast tacos are certainly not lacking flavor. We also add in scrambled eggs, queso fresco and creamy avocado to tone down the spice and make for a more filling meal.
The best part about these breakfast tacos is that they can also be transformed into burritos! Simply use a bigger tortilla (we’d suggest flour so it holds together well), add all of the filling ingredients and wrap it up. You can even assemble them ahead of time, freeze and reheat for a quick breakfast on the go.
There’s no special prep required for these breakfast tacos. Everything can be cooked and assembled in just a few minutes! We start by heating up two skillets – one for the scrambled eggs and one for the chorizo.
You’ll want the chorizo pan at a slightly higher temperature so it cooks quickly and gets nice and crispy. The spice level is totally up to you, but we definitely prefer something on the spicier end in this recipe.
As for the eggs, simply scramble over low heat. The key is to cook them low and slow until just set. If you’d prefer, these tacos would also be great with over easy fried eggs.
For a vegetarian filling, you can substitute black beans or pinto beans seasoned with cumin, salt, chili, garlic and onion powder .
When it comes to toppings, salsa is a must. We prefer a more blended spicy salsa, or salsa verde if you want to tone down the spice level a bit. Avocado is optional and these would also be great with a dollop of guacamole!
Top off each breakfast taco with a generous drizzle of jalapeño ranch and finish with some crumbled queso fresco. You can also use another cheese (cheddar jack would be great here), or leave the cheese off altogether. Enjoy!
