For these Caesar Chicken Salad Croissants I let my good friend the slow cooker do most of the work. Who wants to put much effort in these days anyway? The kids are out of school, demanding snacks on the hour and it’s too hot to cook! We’ve been eating outdoors most nights unless the wasps come by in swarms and packing picnics whenever possible on the weekends. Our town has revamped our spray park so now we just head on down with our picnic blanket, food in tow and call it a day!
Using a slow cooker almost seems like a cold weather thing but what a perfect way to avoid heating up the house. Mine cooks chicken breasts to pull apart tender in about four hours but just adjust the cooking time accordingly. Once the chicken is completely cold I add some thinly sliced celery for a nice crunch and stir in Litehouse Caesar dressing. In my opinion, this is the only Caesar dressing you’ll ever need in your life. It’s perfectly thick and full of garlic and parmesan cheese.
This recipe is great to make ahead of time and bring with you in containers. I typically assemble sandwiches right at the picnic when they’re this easy. If anyone in your group is eating low carb, simply wrap the chicken salad with a large leaf of lettuce instead. Using 1 kg of chicken will leave you with plenty of leftover shredded chicken. It’s ideal to freeze in smaller portions for meals like quesadillas, tacos or to add into soup.
I tried this salad,and the recipe,and found it to be VERY tasty...and well worth my time. I have a son, aged 36 years of age, and oh so very fissy about his foods. This is something that I can fix easily, without much fuss, or without much fixing. This salad was not only tasty,but was easy to fix. My son is not so easy to satisfy, he is one that is very fussy. He is one that is injured from a football accident, and was paralized from that accident. He is very particular about his food and he wants many a great deal of simple change. This was an easy to make salad, requiring not much effort, but was easy to make.
