While I can’t relate to having hungry children in my house, I can relate to having a very hungry husband. In my opinion these two things have a lot in common! I often find my husband digging through the cabinets looking for snacks to satisfy his hunger between meals so I decided that Cheesy Chicken Taquitos were a good solution.
I love that this recipe utilizes rotisserie chicken which makes my life so much easier. I can buy one rotisserie chicken at the start of the week and come up with 2-3 meals or snacks that use this delicious meat. By only adding a few spices and melty cheddar jack cheese, you can transform simple rotisserie chicken into the perfect snack. I love that I can par-bake these and them freeze them for easy snacks during the week or cook them thoroughly for a snack that can be eaten instantly. My husband also enjoys them cold and will just grab the leftovers straight from the refrigerator.
I like to serve these with a side of Salsa Ranch dressing because it combines the perfect mix of salsa and ranch dressing. You can feel good about serving this dressing to your family because there are no artificial flavors, colors or preservatives. Overall these taquitos are quite mild so if you want to spice them up a bit then add a dash of cayenne pepper into the chicken mixture. You can also include other ingredients if you’d like such as diced onion, jalapeño or green chilies.
