This is my very first time making a pita at home for dinner! Can you believe it? I blame the kids for only requesting tacos, burgers and spaghetti on repeat for dinner. This year though, we’ve witnessed a big change in their eating habits. Green things no longer get an automatic eww and both kids are more than willing to at least give new things a try. So when I told them we would be having Chicken Souvlaki Pitas and they simply said “Ok” I did a little happy dance! I remember being quite the picky eater when I was young but then tastes change and you just eat the black olives on the pizza rather than picking every last one of them off. Or it could be I just got too lazy to bother.
For the pitas, I gave the chicken a quick souvlaki inspired marinade in olive oil, lemon juice and oregano. Litehouse® Freeze Dried Oregano, of course! Then pan seared it while I got everything else lined up. If you’re looking to add more veggies and less meat at meal time, this is a great recipe to try. I found one chicken breast was enough for 4 pitas. Obviously we cannot have a Greek flavored pita without Tzatziki sauce drizzled – or poured over top. Litehouse® Purely Balanced Tzatziki Ranch Dressing has a perfect amount of cucumber and dill plus it’s gluten free so anyone sensitive to gluten won’t be left out on this one!
While I was at the store I discovered the deli had an undressed Greek salad with feta and thought, now this is convenience. If you prefer, simply chop up your own vegetables and add some feta. It’s your dinner, you do what you want! I will be filing this meal in my summer must-have for picnics and camping.
