With the warm weather moving in across the US I know that everyone is rushing to get outside and stay outside. This also means that it’s a great time to turn off your stove and heat up your grill! Once the summer hits, I typically spend as much time as possible on my patio and that includes using my grill as much as possible. One of my favorite things about these Cilantro Lime Chicken Tacos is that they make a minimal mess inside your kitchen and use your grill for perfectly grilled chicken.
Tacos are also a great way to keep things fresh and healthy by utilizing fresh produce that you might be growing in your garden. Tomatoes and cilantro are a staple year after year for me and I like to chop them up for the topping on these tacos. You can also ditch the sour cream because with the new Avocado Cilantro Yogurt Dressing you get all the flavor with less fat and calories!
The key to perfectly grilled chicken tacos is marinating your chicken, preferably overnight. This will infuse your chicken with tons of flavor and keep it moist and juicy on the grill. I like to use a mixture of lime juice, olive oil, salt and cilantro for a zesty flavor. Allow your chicken to rest for around 5 minutes when it comes off the grill to lock in the juices. I prefer to chop my chicken for tacos to make them easier to eat.
Chopped tomatoes mixed with onion, cilantro and Cotija cheese all make great toppings for these chicken tacos. You can also try cabbage, scallions or diced jalapenos for a spicier taste.
These tacos go great with a side of chips and salsa or fresh guacamole and will have your family asking for seconds. If you have leftover chicken, it’s also great for making burrito bowls or nachos the next day!
