School’s out for summer! I keep reading that on all my social media from parents just so excited not to be making as many bagged lunches these days. Then the next post is “kids driving me crazy.” We can’t win! Myself included. It took t-minus five minutes before the fights started around here. I have been muttering to myself about summer programs all week. Honestly, the quiet walls of my cubicle are looking pretty appealing right now! I have a few more days until programs start so I’m working from home while trying to keep up with the demands for breakfast, lunch and about four snacks in between.
Lunch today was crispy cheese rollups with guacamole on the side. The kids have gotten so tired of regular sandwiches for the last ten months so I wanted to make something that’s never been in the lunch kit. It’s basically a different way to prepare grilled cheese and super easy.
The crispy cheese rollups start out as ordinary bread rolled flat with a rolling pin. I cut the crusts off but it’s not necessary. Just spread butter or margarine on one side, flip it over, sprinkle with cheese, roll and bake! You can get creative with spices and herbs or just leave them plain with cheese to not disturb the peace. For the guacamole I used the new Guacamole Herb Blend. One jar makes four batches! Avocado, lime juice, salt, a quarter bottle of the herb blend and you have fresh guacamole in minutes.
If the kids aren’t into guacamole and only want to dip things in ketchup then just keep the whole bowl for yourself, grab some chips, ear buds and escape the chaos!
