Hi, I’m April and I’m trying to lose weight as my new year’s resolution. There. It’s out there. Following my wedding in November, of which I worked very hard to get into shape, I decided to ‘reward’ myself for all of the hard work with a few Christmas cookies. And now, here I am in January trying to fix what I messed up. It’s not that it’s wrong to reward yourself with a tasty cookie here and there but it’s all about moderation, and self-control, which I don’t have.
Near the end of the holiday season I found myself feeling rather sluggish. Always tired, feeling a little ‘puffy’ and that’s when I knew it was time to get my act back together and realize that not exercising and eating whatever I wanted was probably not the best way to live a healthy lifestyle.
So here I am in January resolution-ing my way back in shape and getting myself to feel healthier. I’m not on a ‘diet’ per se, I’m just eating healthier and moving more. I’ve been incorporating more fresh fruits and vegetables into all of my meals and eating leaner meats such as chicken and fish. Since it has gotten too cold to roll my grill out I’ve resorted to using my broiler to cook meats without using extra oils and fats.
My go-to recipe lately for dinner has been this delicious Feta and Herb Salmon. It comes together very quickly and I like to use individually wrapped salmon filets that I keep in my freezer. If you have 35 minutes, you have enough time to make this dinner. This salmon goes perfectly with a side of steamed broccoli and rice or quinoa. It’s a complete, light meal that is flavorful and sure to fill you and your family up for dinner.
