Before I owned an Instant Pot, my mashed potato game was sub-par. It was hit or miss if I could execute perfectly fluffy mashed potatoes every time. Once I received my Instant Pot I started testing recipes only to find that my days of pasty sub-par potatoes were over. Every time I make mashed potatoes I only use my Instant Pot. I can guarantee delicious homemade mashed potatoes in under a half hour (every time)! It’s something about the pressure and the exact times that make these potatoes simple.

Making mashed potatoes in the Instant Pot is easy!
First, you will need to peel the potatoes, and cut them into large cubes. Make sure all the pieces are similar in size. This will help them cook evenly.
Next, place in the Instant Pot and cover with about 4 cups of water. Add one teaspoon of salt to the water and mix. Close the lid, making sure the valve is in “sealing” position. For boiling potatoes I like to use the “steam” setting. Select the “steam” setting and cook for 6 minutes.
As soon as the Instant Pot timer is done and it begins to beep, carefully do a quick pressure release of the potatoes. I like to place a hot pad over the valve as well as a dish cloth. This helps with any spattering of water and captures the steam and moisture safely.
As soon as the pressure is released you will want to drain the potatoes immediately into a strainer. Then, return the potatoes back to the Instant Pot. Using a potato masher, immediately mash the potatoes until most are crushed but not smooth. Let the steam escape for a few minutes. Then mix in the butter, heavy cream, Litehouse® Freeze Dried Parsley, Litehouse® Freeze Dried Chives, and Litehouse Simply Artisan Gorgonzola Cheese Crumbles. Mix well until just incorporated. Pro Tip: Do not over mix your mashed potatoes! This is how they can become pasty.
Taste the potatoes then salt and pepper to taste. Garnish the mashed potatoes with additional Litehouse Simply Artisan Gorgonzola Cheese Crumbles (about 1-2 tablespoons), and a sprinkle of both Litehouse® Freeze Dried Parsley, Litehouse® Freeze Dried Chives, and Litehouse® Freeze Dried Chives. Serve immediately or let stay on “warm” setting in the Instant Pot until ready to serve.
