These Greek Chicken Nachos are a fun take on a classic with a pita chip base, grilled chicken, mozzarella, a light and refreshing greek style salad/salsa, a drizzle of Litehouse Dill Ranch and Litehouse feta crumbles to finish everything off! It’s a great lighter option for game day and it’s perfect for serving a crowd.
Ingredients
- 18 ozpita chips
- 2 cupdiced or shredded chicken breast (grilled or rotisserie)
- 1½ cupshredded mozzarella cheese
- ½ cupdiced mini cucumber
- ¼ cupdiced red onion
- ½ cupcherry tomatoes, quartered
- ⅓ cupkalamata olives, quartered
- ¼ cupLitehouse® Red Wine Vinegar with Olive Oil Dressing

Directions
1. Preheat oven to 350˚F and line a sheet pan with parchment paper.2. Arrange the pita chips on the baking sheet in a single layer. Top with a layer of chicken and a layer of mozzarella cheese. Bake for 10-15 minutes, until cheese is melted and chips are lightly browned.3. Meanwhile, add cucumber, onion, tomatoes, olives and red wine vinegar dressing to a bowl and toss to combine.4. Once the nachos are out of the oven, let cool for a few minutes, then top with salad mixture. Drizzle with Dill Ranch and sprinkle feta crumbles on top. Enjoy!
