Ingredients
- 1 eaHerbed focaccia bread, loaf, cut into 1-inch cubes (about 3 cups)*
- 4 tbspButter
- 2 clovesGarlic, minced
- ¼ cupParmesan cheese, coarsely grated
- 2 eaRomaine heads, cut in half lengthwise
- 1 eaFreshly ground pepper, to taste
Dressing options:
- 1 cup Litehouse® Caesar
- 1 cup Litehouse® Lite Caesar
- 1 cupLitehouse® Organic Caesar
- 1 cupLitehouse® Parmesan Caesar
Directions
Melt the butter in a large skillet and add the bread cubes and garlic. Toast over moderate heat for about 5 minutes, stirring cubes often until golden on all sides. Remove from heat and set aside.Using about ½ cup Litehouse Caesar Dressing, brush on cut side of romaine. Grill on both sides, about 1 minute per side. This can be done under the broiler also. Place on plate and drizzle with remaining 1/2 cup Litehouse Caesar Dressing, parmesan cheese, fresh ground pepper and croutons. *Use pre-packaged focaccia croutons to make this unique twist on Caesar salad even easier.
