Summer is almost officially here. That means lots of time spent outside, and a bit less time spent in the kitchen!
Right now, we’re all about easy, simple recipes that only require a few ingredients, yet still utilize the gorgeous fresh produce that’s available all summer. This Ranch pasta salad checks all of our criteria. Incredibly easy (comes together in 15 minutes!), perfect for packing on-the-go (picnics!), and packed with fresh vegetables.
Most classic pasta salads are made with either a mayo dressing or an Italian dressing. You know what’s even easier? Ranch. Just one ingredient, and chances are, you already have a bottle in your fridge.

It perfectly ties together cooked pasta and fresh veggies in this easy pasta salad. Here’s how to make it:
Simply cook your favorite pasta in salted water until al dente. We prefer rotini for pasta salad; the shape holds dressing nicely. You could also use penne, elbows, fusilli or farfalle. Totally up to you!
Once your pasta is cooked, let it cool down a bit. Meanwhile, slice up a bunch of fresh vegetables, including red bell pepper, cherry tomatoes, purple cabbage, celery and fresh summer herbs like basil and parsley. One of the great things about this recipe is that you don’t really need a recipe. You can sub just about any vegetable, including (but not limited to) red onion, corn, olives, broccoli, carrots, peas etc.
We like to keep this Ranch pasta salad vegetable-based as a light side dish, but if you want to make it in to a full meal, we suggest adding in some grilled chicken or tofu. It’s perfect for a quick lunch and makes great leftovers since it’s meant to be eaten cold!
