Everywhere you look it’s “Back to school” I can’t avoid it even though I’m trying to push it out of my mind. We just want to enjoy the last bit of summer before we’re back to routine! I will think about school shoes and binders at a later date.
One thing I don’t mind is prepping for those pending school lunches. I’ve been trying to use up summer type items in my freezer in order to make room for the new time saving items coming, like these kid friendly freezer burritos. My kids don’t enjoy a lot of sauce on their food so I kept these burritos simple with a bit of ranch dip.
For the filling I used brown rice, shredded chicken, black beans, corn and cheese. Once you get all the filling ready you’ll be rolling up burritos in no time. By the third or fourth burrito you’ll be a professional roller. I’ll be honest, my first few burritos were not pretty!
Tips for successful Burritos
Roll em’ up tight! This will ensure the filling stays inside.
Start with room temperature tortillas. If they’re in the fridge they’re more likely to crack when you start rolling.
Avoid overly wet ingredients. No one wants a soggy lunch! Serve salsa, sour cream or guacamole on the side.
