When you live in Wisconsin you keep count of the days until the sun comes out. And I can just say that I am kicking my heels together now that it is finally here! I’m so ready for sunny days, warmer temperatures and all the produce that will be coming into season. One of my favorite vegetables around this time of year are spring peas. I eat them like candy and I make entire salads out of them, including this super easy Spring Pea Salad!
This salad has been around for many years in all sorts of variations. I love the combination of fresh spring peas, creamy dressing, cheese and bacon. Honestly, this salad is so quick and easy that you’ll want to make it every week and bring it to every spring party that you plan to attend. The traditional pea salad that you have probably had in the past includes a base of only mayonnaise and a few spices like pepper and paprika. I like to add a burst of flavor by combining the mayonnaise with a helping of Litehouse Homestyle Ranch Dressing. Using a combination of this and the mayonnaise gives a more robust flavor of herbs and vegetables to compliment the salad.
This salad is great on its own or as a side dish, but I also like to add it to a bowl of spring greens. It already includes dressing but adding it to a bowl of spring greens with a few slices of tomatoes creates the perfect lunch. Peas are a great source of fiber, so they will keep you feeling full, and a good source of vitamin C and folate. If you add a helping of protein this would make a well-balanced meal.
