Pancake charcuterie boards are the new trend on social media, and we are HERE for it!
In case you haven’t seen one, they’re basically loaded brunch boards with all of your favorite breakfast-y foods, including (but not limited to) pancakes, waffles, eggs, bacon, sausage, fruit, syrup, etc. Not only are they gorgeous, but they’re also such a fun idea for serving a crowd! We can’t wait to do this again next time we have family in town for the holidays.
It’s certainly not limited to entertaining – this would be a fantastic way to celebrate any Saturday or Sunday morning! It’s especially fun for kids. They can even help you prepare the easier items, like fruits, veggies and dips.
In my opinion, a pancake charcuterie isn’t complete without some eggs on the side. Instead of frying or hard-boiling, we made a few mini frittatas studded with Litehouse® Simply Artisan Feta Cheese Crumbles and Litehouse® Freeze Dried Parsley and Chives. Frittatas sound fancy, but they’re actually incredibly easy to make and SO tasty. Of course, you don’t have to use mini cast iron pans – just use one larger pan instead.
Basically, all you have to do is whisk together a few eggs, seasonings and feta. Pour into a greased pan, let it cook for a few minutes on the stovetop, then transfer to the oven to let it set completely. The freeze dried herbs add such a fresh taste and crumbled feta adds a salty, briny flavor. I always add more for serving!
When it comes to the pancakes, keep things super simple with a pre-packaged mix. Make them a bit smaller than usual so you can fit more on the board. You can always load them up with chocolate chips, blueberries, peanut butter, etc.
In addition to all of your favorite breakfast staples, it’s always a good idea to load up your board with plenty of fresh fruit! We use berries, grapes, kiwi, banana, oranges, etc. Pair with Litehouse® Chocolate Flavored Dip, because who doesn’t love a little chocolate for breakfast?
