When you think about summer what thoughts come to your mind? For me I think about sunshine, flowers, farmer’s markets filled with fresh produce and freshly prepared meals. I think about how great it is to sit outside on my patio with my grill going and the smell a delicious meal that is coming my way. These thoughts and reminders of summer were the inspiration behind my Sesame Mango Shrimp Salad that I’m sharing today.
I live in Wisconsin which means that warm days are few and far between throughout the year. We wait all winter for the sun to shine and the snow to melt so that we can enjoy a few months of beautiful days. I’m probably exaggerating the timing a bit, but honestly being cooped up in a house all winter makes me eager to get outside, run to the nearest farmer’s market and entertain on my patio.
There is nothing more delicious to me than a meal that comes from the grill. The smoky flavors really enhance any meal and it’s such a healthy way to cook. I decided to create a salad with a sweet and salty flavor using mangoes and Litehouse Sesame Ginger dressing. This vinaigrette dressing makes a great marinade for any meat, and sticks well to shrimp. I like to marinate my meat overnight for the most vibrant flavor but if you have less time I recommend marinating for at least one hour. The salad is comprised of fresh vegetables and mangoes for a sweet finish.
