Slicing into Spicy Island Pork Tenderloin

Some like it hot! In our family, I’m solo on that one. I am the only that appreciates a slight burn and sweat from spicy food. I’m not one to eat immensely hot wings or order items that are so spicy they can’t be enjoyed but I love a good flavourful heat. I’m super excited there’s a bold new dressing from Litehouse: Mango Habenero. How fun to have a new dressing that also doubles as a marinade! We’re camping this weekend and I plan on bringing my new treasure to share with those who share in my adventurous taste.

If you like some heat you’re going to love this recipe! There are three layers of bold flavour on this spicy island pork tenderloin. I used the Mango Habanero dressing as a marinade then created a simple dry rub and finished the dish with a sticky glaze to drizzle over top. After marinating, it’s ready in only 30 minutes. Each step is so easy but the result is stunning!

We had leftovers reheated the next night on a cold noodle salad and the meat was still so tender! My favourite dinners are those that can be transformed the next day into something completely different. You’ve just got to try this!

Spicy Island Pork Tenderloin Recipe

This pork is a combination of sweet and spicy that has a magical ability to disappear off plates!

Just served Spicy Island Pork Tenderloin
Ingredients
    Pork Tenderloin:
  • ½ cupLitehouse® Mango Habanero Dressing
  • For the dry rub:
  • ½ tspCinnamon
  • ½ tspChili Powder
  • ½ tspGround Coriander
  • 1 tspSalt
  • For the glaze:
  • ½ cupBrown Sugar
  • ¼ cupLitehouse® Mango Habanero Dressing

Directions

Place the pork tenderloin and dressing in a resealable bag or covered dish and refrigerate for at least an hour or longer.Preheat the bbq or grill pan to medium heat.Combine the cinnamon, chili powder, coriander and salt. Sprinkle evenly over the pork and place on an oiled grill. Cook the pork for 25-30 minutes, turning occasionally. The internal temperature should reach 170°F.Meanwhile, combine the brown sugar and dressing in a small sauce pan. Whisk over medium heat until combined and thickened. Pour the glaze over the pork just before serving.
