An afternoon snack with all the right crunch! These colorful garden veggies are baked to perfection and perfectly paired with our Litehouse Purely Balanced Garden Ranch for dipping.
Ingredients
- 1 eaBeet, thinly sliced
- ½ lgSweet Potato, thinly sliced
- ½ lgYam, thinly sliced
- 3 eaCarrots, thinly sliced
- ½ eaGreen Kale, head, chopped
- ¼ cupOlive Oil
- 1 eaSalt, to taste
- 1 eaPepper, to taste
- 1 eaPurely Balanced Garden Ranch
Directions
Toss all the sliced and chopped vegetables in olive oil and season with salt & pepper.Place all vegetables on a parchment paper linked baking sheet.Preheat oven to 375 degrees Fahrenheit and add baking sheet.Bake vegetables for 30 minutes or until crispy[JK1] .Finish the vegetables for 2-3 minutes under the broiler, if desired.Serve with Purely Balanced Garden Ranch. [JK1]I know you mentioned that you baked these for 10-15 minutes, but I wasn’t sure that potatoes and beets would cook that quickly at 375 degrees Fahrenheit, so I upped this. But let me know your thoughts!
