When people think of Caprese, most will picture a salad made of sliced fresh mozzarella, tomatoes and basil, often topped with a balsamic reduction. I used Balsamic dressing and turned the salad into a super quick pizza that is perfect for busy weeknights! Let’s face it, the family is always going to favor pizza over salad. The refrigerated dressing is made with balsamic vinegar imported from Italy, so you can feel fancy while taking no time getting dinner ready!
Caprese French Bread pizza is perfect because there is no messing with dough. Some weekends I have a spare two hours to make dough from scratch but there’s no way that’s happening Monday to Friday. Using French bread is fun for the whole family too. Grab two loaves and each person can make their own creation. We use up the leftovers for school lunches. A nice change in the lunch kit.
It’s as easy as slicing the bread in half, drizzling the dressing over and topping with cheese and tomatoes. Be sure to add the basil after baking. I made the mistake of drying out my basil the first round. Not recommended!
