Now that the heat waves of summer are coming in I’m looking for easy meals that we can take on the go to a park or enjoy while camping. This Coleslaw Macaroni Salad is a great make ahead side dish that stores well and pairs perfectly with a barbequed burger or a hotdog cooked right over the fire. The salad is an easy summer side dish combining a classic coleslaw with additional veggies and pasta. Sure to be a hit with the crowd!
I used cooked macaroni I had left over from another meal but any pasta you have on hand will be fine. There are so many shapes out there to choose from. Little bow ties, spirals or tiny shells would all be fun. Just be sure to cook to al dente as they will absorb a little of the dressing.
For my Coleslaw dressing, I used Litehouse Organic Coleslaw dressing and dip. It’s sweet, tangy and made extra thick and creamy. I found even after leaving the coleslaw macaroni salad in the fridge overnight there was no water lurking in the bowl.
