Full disclosure: There is no actual rice in this Cauliflower Fried Rice recipe. I had doubts but once I took my first bite I was pleasantly surprised, shocked even! I am eating a bowl full of vegetables and I’m not even minding it. Isn’t January so hard? I mean, December was a complete free for all of chocolate, eggnog and whatever else I could get my hands on. Because calories don’t count during the holidays! Yeah right, my jeans tell a completely different story. Now that I’m forced out of my comfy pj’s and back to the real world I figured I better change my ways. January, you’re not exactly my favourite right now but I’ll thank you later.
Getting back to this cauliflower phenomenon… Did you even know you could make all these different recipes with cauliflower? There are complete sections in the frozen food area dedicated to products swapped with this carb friendly vegetable. When I was growing up we simply added some cheese sauce and called it a day! But here we are, making rice and frying it up.
I found a product that some may refer to as a cheat but I consider a total win. I found pre-packaged cauliflower rice with vegetable in the frozen vegetable section and the price was fairly reasonable. If you can’t find this time saving gem, just dust off the old food processor and work in batches pulsing until the cauliflower is broken up into tiny pieces that resemble rice. Cauliflower fried rice is a complete game changer for my family. I don’t even have to mean mom by kids into eating their vegetables. A scrambled egg, diced chicken or edamame would all be great additions.
