Wash vegetables. Cut bottom 3" off of asparagus and discard. Cut remaining asparagus into 2" sections and lightly blanch in boiling water. This should only take 1 - 2 minutes. Remove from water and place in bath of ice-cold water. Chop lettuce and arrange in bowl or tray. Layer chopped cucumbers, avocado, and asparagus over the top. Garnish with lemon wedges and garlic bread if you wish. Drizzle with Organic Lemon Herb dressing and server more on the side.
