Topping Authentic Greek Souvlaki with Feta Cheese Crumbles

This year certainly has not gone as anticipated and finding fun things to do while being stuck at home as proven difficult after all of these months. I found myself missing travel and missing out on trying new foods in restaurants around the globe. I decided that it was time to bring some fun into dinnertime at home and recreated festive meals that I have had during my travels abroad. During my time in Greece I found that authentic Greek souvlaki was one of my favorite street meals and have also found that it is really simple to make at home.

Greek souvlaki actually refers to the skewer itself. It can be made of meat, cheeses and vegetables but it must be on a skewer. Traditional souvlaki is usually pork or chicken or a mixture of both. The meat is marinated in a simple mixture of olive oil, lemon juice and oregano and then grilled to perfection! I found that the Litehouse Red Wine Vinegar and Olive Oil dressing works well on pork and the Greek dressing adds a nice touch of flavor to chicken for this meal. Cubing up the meat and marinating it in the dressing for 1-2 hours is enough time to tenderize and fully flavor the meat before grilling.

What I like most about this dish is that it can make mealtime fun as your family gets to build their own souvlaki! Traditional souvlaki involves a combination of freshly sliced tomatoes, onions, and tzatziki sauce but I like to add on feta cheese, lettuce, and kalamata olives. All of these options work well together when piled high in warm, fresh pita bread.

You can easily make dinner a more exciting time for your family by creating an ethnic meal where everyone gets to choose their own adventure. I know that I enjoy when I get to create my own meal that is slightly different than my husband’s but equally as delicious. If you’re looking to add some fun back into your household, try this recipe for Authentic Greek Souvlaki!
