It’s nearly time for holidays and I’m ready to celebrate the season my favorite way, with all the food!
Nothing gets me in the holiday spirit quite like baking and attending holiday parties. This year I’ll be arriving with Bacon and Ranch Jalapeño Poppers everywhere I go! They are not only super easy to make but you can prepare the filling in advance and have it ready at a moment’s notice. The jalapeño poppers travel well and are perfectly delicious if they cool to room temperature before you make it to your destination. I like to make double the filling and use it for stuffed mushrooms as well.
I slice each piece of thin cut bacon in half before wrapping it around the jalapenos. A whole piece sounds like a good idea, because bacon! But it is too much of an overlap and hides the delicious filling. I added Litehouse Ranch dressing to the cream cheese mixture to add flavor and to soften it for ease of stuffing the Jalapeños. This certainly won’t be the only holiday appetizer I add ranch dressing to. I’ve got plans of making cheesy ranch pull apart bread too. So many options for one bottle of ranch dressing!
Before we get making our appetizer with Jalapeño peppers, let’s have a safety moment. I’m sure you’ve heard that jalapeno’s and eyes do not mix. I recommend thoroughly washing your hands after seeding the peppers and once again after stuffing them. Be sure to scrub under your nails for any hidden bits. That is not a surprise we want later! I take it to the next level and also wear a pair of sunglasses while seeding the peppers. No flying objects or liquids will be taking me out this holiday season!
