When the holiday season arrives, I find myself gravitating to all things red, green and blue. And by blue, I mean getting my hands on all blue cheese appetizers that I can! It never fails that during the holiday season I seem to have friends and family stopping by with little notice and I find myself scrambling for a last-minute bite to serve. I like to have a stock of appetizer ingredients on hand during the holiday season and always have blue cheese on hand to make my favorite Cranberry Blue Cheese Bites.
I love blue cheese because it can be so versatile. It’s salty but also has a sweet side so it pairs well with a lot of different flavors and Litehouse offers a great line of blue cheese. One of my favorite combinations is blue cheese and cranberries because you get a nice bite of the nutty/salty cheese and the sweet cranberries. Grab the shells from the freezer and fill then with your cheese mixture – pop in the oven for 12 minutes and you’re all set to garnish and serve! I like to use canned whole berry cranberry sauce for an easy topping and a walnut half to complete the look. If you’re feeling festive you can also garnish with a sprig of rosemary.
