Your at-home Super Bowl party might look a bit different this year, but there’s no reason not to enjoy your favorite game day snacks!
For those of you (like me) who are really just there for the food, this buffalo cauliflower pizza with ranch is a serious winner. It’s the perfect combination of spicy, cheesy and cooling (thanks to the ranch drizzle). Plus, it’s vegetarian and pretty easy to make!
To start, you’ll want to pick out a pre-baked pizza crust. If you want to go homemade, go for it! But it’s much, much easier to pick up a crust without toppings in the freezer section. Alternatively, you can use a mix – just be sure to follow the directions on the packaging.
The next step is to prep the cauliflower. Start by trimming off the stem and any outer leaves. Then, break or slice the head of cauliflower into small, bite-sized florets. You don’t want any huge pieces – they need to be small enough to work as a pizza topping.
Toss the cauliflower pieces in a bit of olive oil and salt, then roast for about 25 minutes until they are fork tender. They don’t need to be crispy at all – they’ll finish cooking when you bake the pizza.
To make the buffalo sauce, heat some butter and hot sauce (your favorite buffalo sauce) in a small saucepan. Toss the roasted cauliflower in the sauce.
Time to assemble your pizza! If you want, you can spread a thin layer of pizza sauce on the crust. It’s optional – this also works fine without sauce but I know some people prefer sauce. Add the cheese and buffalo cauliflower.
Bake until the cheese is bubbly and golden brown. Let the pizza cool for a few minutes, then slice and drizzle with ranch. Alternatively, you can use the ranch as a dip. Either way, we don’t skimp on the ranch in this house!
