I’m almost in disbelief that the holiday season is already upon us! Life around here has turned from grilling and outdoor dining to comfort food and caramel. Lots of caramel. With the exception of a vacation recently, I’ve been spending a lot of time in my kitchen lately testing out new desserts that feature one of my favorite fall flavors: caramel. There’s just something about fall that draws me to this delicious treat, as I look to drizzle it on everything in sight.
I know that the holiday season typically calls for pies but I’m all about a variety of desserts. My family also seems to continually be adding children and I think that pies just are not enough anymore. Not to mention I’m totally a cake person. If you gave me a choice of chocolate cake or pumpkin pie, I’d totally take the cake. And today I bring you a delectable cupcake recipe that is sure to ‘take the cake’ this holiday season.
These cupcake are super quick and easy to make and look so beautiful that nobody will even believe that you made them yourself. Unless you’re a professional cake decorator, or a baker, then they might believe you. I know it seems like cheating but I started with a boxed spice cake mix and added in fresh apples to create a decedent cupcake base. The frosting is a buttercream/cream cheese mixture with a hint of caramel.
