If your family is crazy about dill pickles like my family is, you are going to LOVE this easy soup recipe. Dill Pickle Soup may sound weird, but trust me, it totally works. I wasn’t sure at first either about it, but then I had my first bite and there was no looking back. Even the kids liked it, which says a lot in my home of picky eaters!
What I like about this recipe is that it’s easy to make with common ingredients that you probably already have in your pantry and fridge. It has soup staples like chicken broth, potatoes, onions and carrots. To get that dilly flavor, I used a combination of chopped dill pickles, pickle juice right from the jar of pickles and Litehouse® Dilly Dip Dressing & Dip. It’s extra pickle-y!
It’s made like a typical soup where you bring the veggies and broth to a boil and then reduce to a simmer. To get that creamy element, I mixed together Litehouse® Dilly Dip Dressing & Dip, sour cream and flour. You need to add the creamy mixture a tablespoonful at a time to the hot soup while you are whisking. Don’t worry if you see a few clumps at first. They will blend in while you continue to whisk away.
You can garnish with some fresh dill if you want to make it pretty for presentation. I’ve also added a dollop of Litehouse® Dilly Dip Dressing & Dip to my bowl of soup and swirl it around to melt it in. It’s SO GOOD!
Each bite is a flavor explosion of dill combined with a creamy bite of potatoes, carrots and chopped pickles. My daughter loves dill pickle chips and told me it was one of her favorite soups. I knew I had a winner when she told me that!
