I’d like to take a few minutes to talk about a very special man in my life. For 30 years he has been driving me crazy. I like to call him ‘Dad’. I have a very different relationship with both of my parents. While my mom is the person I go to with most of my life issues and when I need a shopping partner, my Dad has traditionally been my financial advisor and the person I go to when I need a good reality check. I’m sure this makes him sound like he can be pretty hard on me, but being the only girl out of 3 you can picture on a deeper level that I’m really daddy’s little girl. I like to think I’m the favorite. I guess I can be the favorite daughter.
My Dad is a very simple man. He doesn’t dress in fancy clothes or drive fancy cars. He would much prefer to wear the same pair of jean shorts for 20 years until they are literally falling apart, and I make fun of him for it. I also make fun of him for wearing jean shorts, but that is a whole other story. This is just the kind of relationship we have. As embarrassing as he can be, he’s still one of the most important men in my life. My Dad taught me some very important lessons while growing up, including how to stand up for what I believe. This has been a very important lesson throughout my life and many people around me know that I’m not a pushover. If I feel I am right and have justification as to why, you are sure to hear about it. I think that this is a very important trait to have and it makes me a stronger and better person. I like to think that my Dad is very proud of the woman that I have become.
I was trying to come up with a plan for Father’s Day that included some sort of event or travel plans but I just couldn’t think of anything. Again, my Dad is pretty simple and just appreciates me spending time with him. I decided that a cookout at home would be the most ideal. We can share food and some laughs and it will make his day perfect. I came up with these flavorful chicken kebobs because they were pretty basic but paired them with deliciously sweet grilled peaches. The peaches create a more complex flavor for this meal and the drizzle of balsamic vinaigrette brings all of the flavors together perfectly.
