If there’s one thing that I enjoy around this time of the year it would be traditions. The holiday season often brings out the best traditions including caroling, volunteering, family dinners and so much more. One of my favorite traditions is that I don’t allow myself to do anything related to the holiday until after Thanksgiving. I feel that Christmas has a special place in my heart and it shouldn’t be overshadowed by other holidays around this time.
One of my other favorite holiday traditions is the gathering of my family at Christmas to enjoy the company that we bring and delicious food (of course). I do enjoy some gift giving but more important is the time that I get to spend with my family. We typically gather on Christmas Eve to enjoy holiday music, a small exchange of gifts and of course, food.
One of the foods that you can always find at our Christmas Eve lunch is roasted chicken. I understand that purchasing a herb roasted chicken from your grocery store is probably the easiest way to do this but it really is super simple to do this at home. Depending on the size of your group you may need to roast 1-2 chickens. I like that the Poultry Herb Blend takes the guess work out of what blend of herbs to use when roasting. This blend of thyme, sage, garlic and rosemary forms the perfect herb flavor combination.
Be very cautious when placing the butter under the skin as it can easily tear. You’ll want to keep it whole to allow the juices to stay in the chicken. Nobody likes a dry chicken! Spreading the remaining butter on top of the chicken will create a golden color and a crisp skin. Allowing the chicken to rest for 10 minutes after roasting will ensure that the juices stay inside of the meat.
