One of my dreams in my early years of adulthood was to own my own home with a beautiful backyard where I could entertain all my friends. Just before I got married that dream came true as we purchased our first home together! And I don’t know why I didn’t think about it before, but behind every dream comes a lot of work and the same was true for my home. Thankfully, after a lot of hard work our backyard is a beautiful sanctuary where we can relax and entertain our friends. We’ve been able to invite people over for cookouts filled with food and desserts and the most recent thing on my cookout menu has been this Loaded Ranch Potato Salad.
Potato salad has always been one of my favorite picnic foods. I’m totally obsessed with mayonnaise, which I realize some people think is gross, and trying everyone’s recipe for potato salad is always very exciting. I decided to mix things up this year by cutting the mayonnaise with ranch dressing. It adds another layer of flavor and freshness to the salad and makes it extra creamy. My favorite is the Litehouse Homestyle Ranch dressing because of the fresh herb and vegetable flavors mixed inside.
Because I’m also a fan of a good loaded baked potato, I decided to mix all that goodness into this potato salad. Of course, I included bacon, along with sharp cheddar cheese and a sprinkle of green onions. I let the ranch dressing do the rest of the talking. This potato salad come together easily because I use red potatoes which don’t require you to do any peeling. Be sure that you don’t overcook the potatoes because the skins will begin to peel. I also like to chill the potato salad overnight before serving so that all the flavors mix together well.
