Mediterranean Grilled Chicken Salad with Tzatziki Ranch

Ingredients
    For Chicken:
  • 1 lbsChicken Breasts
  • 3 tbspOlive Oil
  • 2 tbspLemon Juice
  • 1 tbspRed Wine Vinegar
  • ½ tspSalt
  • 1 tspLitehouse® Freeze Dried Oregano
  • ½ tspPepper
  • ½ tspGarlic Powder
  • For Salad:
  • 1 eaRomaine Lettuce, Head
  • 1 cupCherry Tomatoes, Halved
  • 1 cupCucumber, Thinly Sliced
  • ½ cupRadish, Thinly Sliced
  • ½ cupRed Onion, Thinly Sliced
  • ½ cupKalamata Olives, Halved
  • 1 eaLitehouse® Tzatziki Ranch Yogurt Dressing
  • For topping:
  • 1 eaPita Chips
  • 1 eaCrumbled Feta

Directions

Whisk together olive oil, lemon juice, red wine vinegar, salt, oregano, pepper and garlic powder. Coat chicken in marinade, cover and refrigerate for 30 minutes. Grill chicken for about 6 minutes on each side, until cooked through.Toss lettuce in some of the dressing. Top with tomatoes, cucumber, radish, red onion, olives, sliced chicken breast and pita chips. Top with more Tzatziki Ranch dressing and crumbled feta.
