Do you ever have those nights when you want to get dinner on the table quickly, but aren’t sure what to make? I have an easy family friendly recipe that is ready in just 25 minutes: Mushroom Pasta! It’s quick. It’s yummy. Everyone LOVES it – even picky kids!
Perfect for Meatless Mondays or whenever you want to try a vegetarian meal option, this pasta recipe will become one you make again and again. I make it often in our home. My spouse says it reminds him of his mom’s cooking. That’s a compliment because she is a GREAT cook.
The beauty of this recipe is that you can use whatever kind of pasta you have in your pantry. I like fusilli or rotini, but even macaroni noodles or spaghetti would work.
I used two kinds of fresh mushrooms – white mushrooms and cremini mushrooms. If you can’t find cremini mushrooms at your grocery, you could easily substitute white mushrooms in their place.
It will appear to look like a ton of mushrooms when you first put them to cook in the skillet. However, mushrooms will shrink quite a bit in the cooking process so not to worry.
It is a meatless dish, but if you are wanting to add a little protein, try lean ground beef, ground turkey or ground chicken. Cook the meat along with the mushrooms and onions. I find we don’t even miss the meat though. The mushrooms give a “meaty” feel to this recipe.
