Ok everyone be honest, who has declared that with the New Year comes a New You? The first weeks of January are by far the most critical when creating healthy habits that support a successful New Year’s Resolution. The “New You” isn’t going to come with a fad diet that lasts a few weeks and drops a few unwanted pounds. It is going to come by creating healthier everyday habits that will result in a healthier body and mind over a longer period of time.
My resolution this year is to eat healthier lunches at work. The lunching hour is always a struggle for me, especially since I work away from the home during the week. Getting the kids off to school in the morning as well as getting myself off to work often push lunch meal planning on the back burner. I am left eating whatever I can get my hands on at work, usually pastries.
I work part time at a Coffee Roaster. In order to set myself up for lunchtime success I have to make packing a healthy lunch as quick and easy as possible. Expecting myself to prepare chicken breast and a few veggies just isn’t realistic. I’ll fail before I even start. What I need is a huge batch of something tasty and healthy sitting in my fridge everyday that I can simply scoop into a To-Go container on my way out of the house. I need a collection of protein packed salad recipes!
My New Year, New You Confetti Kale Salad is the first recipe to help me get on track with healthy lunches. The kale and edamame provide plenty of protein and a wide array of vegetables bring the nutrition needed to keep my mind running at top speed during a busy work day. I knew that I also wanted something sweet, I have gained a bit of an afternoon sweet tooth due to all of the pastry filled lunches of the past.
While searching through the Litehouse Vinaigrette selection for something a little sweet I passed up the Pear Gorgonzola Vinaigrette a couple of times. I just assumed it would have more calories than I wanted. I should have known better! It contains only 50 calories per serving, that’s less than most of the preservative ridden “diet dressings” found on the shelves of the supermarket.
Turns out Pear Gorgonzola Vinaigrette is exactly what my salad needed. Providing a sweet and tangy flavor along with just a smidge of rich Gorgonzola, the dressing took this recipe over the edge!
Because this Confetti Kale Salad is made with such hearty vegetables it is good to sit in the fridge for a few days. Meaning I only have to make lunch once every 3-4 days. And because it is so beautiful and tasty I am more than excited to dig in at every lunch break! Just a couple more tools for my success!
