Classic guacamole speckled with sweet, juicy, deep red pomegranate arils makes an unexpectedly scrumptious, delightfully sweet-savory addition to your holiday party menu.
The guacamole is prepared simply with just ripened avocados, key lime juice (or can swap for half lemon and half lime juice), a bit of sea salt, and my favorite guac-hack of all time– Litehouse Guacamole Herb Blend. This medley of freeze-dried herbs and spices features all the key players required for never-fail guacamole including red onions, cilantro, lemon peel, tomato, red chili, garlic and more. Once the convenient herb blend hits liquid or moisture in a recipe, it rehydrates and makes magic in nearly every dish – guacamole, soups, salad dressings, side dishes and more.
Turning Pomegranate Guacamole with Herbs into a festive holiday wreath presentation is easy, I’ve simply served in a round bowl and added clusters of pomegranate arils around the perimeter to resemble berries. The fresh herb of your choice (I’ve used rosemary) can be cut in sprigs and tucked in around the berries for evergreen leaves. Or, if in a super rush, just skip over the “decorating” and stir in the pomegranate seeds straight into the dip and skip the fresh herbs.
