To start, you’ll need a few ripe avocados. Since avocados are the base of this recipe, they’ll need to be ripe but not overly ripe for best results. To test, gently give the avocado a little squeeze. If the avocado yields to firm yet gentle pressure, then you know it’s ripe and ready to go. Sometimes they have a darker color, but as color can very so much it’s best to go by feel instead of color. It should feel lightly soft, but not mushy.
To quickly ripen avocados, you can store them in a paper bag with an apple or banana and place them on the counter. Ethylene, which occurs naturally in fruits like apples and bananas can trigger the ripening process. Trapping the gases in a paper bag helps the avocados ripen faster!
From there, you’ll add in finely chopped kale leaves, ½ a jar of Litehouse Guacamole Herb Blend and 3-4 tablespoons of fresh lime juice. To finely chop the kale leaves, remove the stem then roll the kale leaf into a tight cylinder. Starting at the short end, thinly slice ribbons, then roughly chop again. Alternatively, you can use a food processor to quickly chop the leaves.
Mix everything together, and season to taste. For a brighter, more tart guacamole, add in more lime juice. For a more chunky guacamole, you can add in chopped fresh tomatoes, red onion and cilantro if desired.
