With school season starting I have been getting questions from a lot of my friends about quick and easy meal ideas because all their lives are about to get a little more hectic. Even though I do not have children starting school I am always looking for fast meal ideas. As someone who works full time and part time as a blogger, I find myself busier than ever! One of my new favorite go-to recipes for busy nights are these Sesame Chicken Soba Bowls.
Next to Mexican food I always find myself reaching for something that is Asian-inspired. I’ve been on a soba kick lately and love slathering some variation of a sesame or peanut butter sauce all over these noodles. Today’s recipe is super quick and easy and features a light sesame ginger sauce flavored by Litehouse Sesame Ginger dressing. This dressing makes for a quick chicken marinade and a great sauce starter for the overall dish. This dressing has all the ginger, soy sauce, rice vinegar and sesame seeds that you need to make a flavorful soba bowl.
To make life easier I used the same pot of boiling water for both the soba and the broccoli. After you sauté the chicken in a separate wok-style pan you can easily toss the drained soba and broccoli into the pan to finish the dish. These noodles are also delicious if you serve them cold so they are great leftovers for lunch the next day. This soba bowl offers a nice balance of protein and a serving of vegetables so you know that your family is getting a complete meal!
