The kids are officially done with school for another year. Bring on a much needed break from bagged lunches! My break from packing those little bags full of goodies won’t be too long, maybe a week but I’ll gladly take it! The kids have a month of various day camps before we head off on our family vacation later this summer. While we work in our offices the kids will be busy at the parks, swimming with their new found friends and they’ll get to test drive a variety of sports. I’d say they get the better deal this summer!
Since I’m inside most of the day I try to keep dinner simple during the summer. The less I’m in the kitchen the more we can get outside. We’re pretty fortunate up north this time of year. The sun doesn’t set until almost 10pm. We recently bought a bike attachment for my youngest so he can be towed behind us while still peddling along. It’s allowed us to go from short little jaunts around the Dinner tonight was extra easy. A cold sesame ginger soba noodle salad. I used Litehouse Sesame Ginger dressing and did a quick marinade on the shrimp. Ready to use sauces, marinades and dressing really save the day! Getting the soba noodles ready takes no time at all and can be prepared the night before. Just give the noodles a quick rinse before tossing with the dressing as they do tend to stick after sitting. Having a few items ready to go in the fridge is a great time saver. Especially if you just want to get out there and take advantage of a beautiful evening! If you like you can double the recipe and have delicious leftovers for lunch. Throw in extra veggies you have on hand and easily stretch the portions This is a really versatile recipe and I love the contrast of the cold noodles with warm toppings.
