Strawberry Basil Feta Paninis! I’ve been making a version of this sandwich for almost a decade now and it’s one of my favorites way to enjoy juicy strawberries in the spring and summer. Layers of sweet berries and creamy feta is so delicious, and a must-try.
One of my favorite salads is lettuce, strawberries, feta and a balsamic-basil dressing and this is that in sandwich form! If you love sweet and salty combinations, then you will love this panini. Quick and easy to put together, you can enjoy this sandwich in less than 15 minutes from start to finish.
The secret in this simple panini is Litehouse’s Simply Artisan Feta Cheese Crumbles. The fresh and delicious taste of this cheese brings the perfect tart and salty flavor to any fresh dish— but especially paired with sweet strawberries and herby basil. I love this feta on salads, over grilled vegetables, pizza and more.
The basil might sound weird, but it pairs so nicely with the berry and feta. Consider most sweet and salty salads have some type of herb in them, the basil leave provides nice contrast so don’t skip it. A drizzle of honey on top brings the entire sandwich together, especially as it melts into the creamy, melted feta nooks and crannies.
No panini press? No problem! All you need is to skillets and a few canned goods to make your own panini press. Heat the butter in a skillet, then add the assembled sandwich. Cover with the other skillet and place a few heavy cans on top to help press the skillet into the sandwich. Let cook for a few minutes, then flip and repeat.
