Anyone close to me knows that I’m all about globetrotting. If you were to offer me a ticket to anywhere in the world, I would take it and go experience another culture in a heartbeat. Bottom line, I love to travel and it’s because outside of these walls that I live is an amazing universe filled with fun, adventure and amazing foods.
Today is International Picnic Day, an informal holiday but one not to miss. In light of the fact that it’s mid-week, there is nothing stopping you today from celebrating this holiday with friends and family by heading outside with food and some fun. Nothing breaks up a week like activities and a tasty meal enjoyed outside.
The origin of picnics date back to Victorian times and included elaborate feasts, however, you can create a less complicated picnic with some tasty sandwiches, baked chips and fruit salads. Some of my favorite international picnic flavors include Tuscan Herb Pasta Salad, Sesame Ginger Bok Choy Salad and Cotija Cilantro Guacamole. While thinking about what type of international picnic dish I could create for dessert, I thought about a watermelon and feta salad. Feta and watermelon is something that I have been seeing more and more of and just have not tried. Feta and watermelon seemed like an odd combination but this Greek favorite is perfect for the summer. The saltiness of feta cheese is balanced by the sweetness of the watermelon and finished off with a sprig of mint. This salad is the ultimate expression of summer.
I encourage you to make the salad right before serving to keep the watermelon crisp and the cheese nice and creamy. I would encourage you to call up some friends or family today to invite them to gather for a picnic tonight.
